1 . Tricolour Beetroot and Carrot Idli

Ingredients

For the idli batter

  • Raw rice or idli rice – 2 cups
  • Urad dal – 1 cup
  • Poha – ¼ cup
  • Salt – to taste
  • Water – as required

For vegetable purees

  • Beetroot grated – 1 cup
  • Carrot grated – 1 cup
  • Ginger – ½ inch (optional)
  • Green chilli – 1 small (optional)

Procedure

  • Wash and soak rice separately and urad dal with poha separately for 4 to 6 hours. Grind the soaked urad dal and poha first until light and fluffy using an ELGI Ultra Wet Grinder. Grind the rice next to a slightly coarse texture. Combine both batters, add salt, mix well, cover, and allow to ferment overnight.
  • Prepare beetroot and carrot purees separately using an ELGI Ultra Mixer Grinder. Divide the fermented batter into three portions. Mix beetroot puree into one portion, carrot puree into the second portion, and keep the third portion plain.
  • Grease idli plates lightly. Pour batter in layers starting with plain batter, followed by carrot batter, and then beetroot batter. Steam for 10 to 12 minutes and serve hot.
