Batter Preparation Steps
1.Soaking the Ingredients:
Wash idli rice 2-3 times and soak it in ample water for at least 6 hours. Now separately wash urad dal and soak it along with fenugreek seeds for 4 to 6 hours.
2.Grinding the Batter :
- Take the biggest jar (1.5 L) of the Stealth Elite mixer grinder and add the soaked urad dal into it. Grindthe dal first with cold water until fluffy and smooth. Cold water is added to prevent the batter from getting heated while grinding. Then transfer the dal batter into a vessel and add the soaked rice tothe mixer grinder jar.
- Grinding the rice is to be done in 2 batches. Grind the soaked idli rice until it becomes a slightly coarse, grainy paste. After grinding the rice in 2 batches, transfer the ground batter from the mixer jar.
- Mix the ground rice and urad dal together, add salt, and blend well. The batter should be thick yet pourable. Consistency is very critical for fluffy soft idlis. The batter should neither be runny nor gooey thick.

3.Fermenting the Batter
Transfer the ground and mixed batter to a large container. There should be some space above the batter in the vessel, for it to expand and rise. Cover it with a lid and let it ferment for 8-12 hours in a warm place. The batter should double in volume and develop a slightly tangy aroma and taste. After the fermentation process, the fresh batter can be used to make nice soft fluffy idlis. The unused batter can be stored in the refrigerator and used for a day or two from then.
