Vegetable Pancakes

Ingredients

  1. Onion – 1 (thinly sliced)
  2. Garlic – 5 cloves
  3. Green chillies – 3 (optional)
  4. Cabbage – 1 bowl (shredded)
  5. Carrot – 2 (shredded)
  6. Salt
  7. Pepper – 1 tsp
  8. Cumin powder – 1 tsp
  9. Kashmiri chilli powder – 1 Tsp
  10. Coriander leaves
  11. Wheat flour – ½ cup
  12. Chana dal – ½ cup
  13. Oil

Cooking directions

  • Take oil in a pan. Add sliced onions, crushed garlic, chopped green chillies, shredded cabbage, carrot and saute for 2-3 mins.
  • Add salt, pepper powder, cumin powder, Kashmiri chilli powder and mix well.
  • Add water, mix and cover the pan with a lid. Cook for 5 mins.
  • Transfer the vegetable mixture to a bowl and add chopped coriander leaves, wheat flour, roasted chana dal powder and mix well.
  • Add enough water to the veggie mixture for a perfect consistency.
  • Heat a tawa. Take a spoonful of the vegetable mixture, place it on the tawa and make pancakes.
  • Cook the pancakes on both sides for 3 minutes each.
  • Remove them from the pan once they are golden brown.
  • Serve them hot.

Corn cheese balls

Ingredients

  1. Cooked corn kernels – 1 ½ cup
  2. Boiled potato – 2
  3. Mozzarella cheese – 100 g
  4. Onion – 1 (chopped)
  5. Green chillies – 2 (finely chopped)
  6. Ginger – ½ inch (finely chopped)
  7. Coriander leaves (finely chopped)
  8. Salt
  9. Pepper
  10. Corn flour – 2 tbsp
  11. Bread crumbs
  12. Oil

Cooking directions

  • To a mixer add cooked sweetcorn kernels and pulse it.
  • Grate the boiled potatoes and cheese and keep it aside.
  • To a large bowl, add grated potatoes, pulsed corn kernels, corn kernels, cheese, onions, green chillies, ginger, coriander leaves, salt, pepper, corn flour and bread crumbs.
  • Mix everything and knead well.
  • Make small balls out of the mixture.
  • Mix corn flour in little water and make a slurry. This should be neither runny nor thick.
  • Dip the corn balls in the slurry and roll it in the bread crumbs.
  • Refrigerate the balls for 15 mins.
  • Heat oil in a kadaai, and drop the corn balls.
  • Fry the balls until they are golden brown in colour. Serve hot.

Paneer Fingers

Ingredients

  1. Paneer
  2. Turmeric powder – ¼ tsp
  3. Chili powder – ½ tsp
  4. Salt
  5. Oil
  6. All-purpose flour – 4 tbsp
  7. Corn flour – 2 tbsp
  8. Water
  9. Bread crumbs

Cooking directions

  • Cut the paneer into finger size pieces.
  • Add spices to it – ¼ tsp of turmeric powder, ½ tsp of chili powder, salt and pepper.
  • Toss this and let it sit for 10 minutes. Do not mix aggressively.
  • For batter, add 4 tbsp of all-purpose flour, 2 tbsp of corn flour, salt, pepper and mix it well with water till getting thick consistency.
  • Dip the paneer fingers into the batter, make sure it is fully coated and put it into bread crumbs and coat it well.
  • Shallow fry the paneer fingers in a hot pan with oil.
  • Yummy Paneer Fingers are ready.
