Ingredients

  • Idli rice – 2 cups
  • Whole urad dal – 1 cup
  • Fenugreek seeds – 1 teaspoon
  • Salt – to taste
  • Water – as required

Method

  1. Wash and soak idli rice for 5 to 6 hours.
  2. Wash and soak urad dal and fenugreek seeds separately for 4 to 5 hours.
  3. Grind soaked urad dal first using the large jar, adding water slowly until fluffy and airy.
  4. Grind rice to a slightly coarse consistency.
  5. Mix both batters together, add salt, and combine well.
  6. Cover and ferment overnight in a warm place.
  7. Pour batter into greased idli plates and steam for 10 to 12 minutes.

Serving Suggestions

Serve hot with coconut chutney and sambar.
Suitable for breakfast or light dinner.
