Ingredients
- Idli rice – 2 cups
- Whole urad dal – 1 cup
- Fenugreek seeds – 1 teaspoon
- Salt – to taste
- Water – as required

Method
- Wash and soak idli rice for 5 to 6 hours.
- Wash and soak urad dal and fenugreek seeds separately for 4 to 5 hours.
- Grind soaked urad dal first using the large jar, adding water slowly until fluffy and airy.
- Grind rice to a slightly coarse consistency.
- Mix both batters together, add salt, and combine well.
- Cover and ferment overnight in a warm place.
- Pour batter into greased idli plates and steam for 10 to 12 minutes.

Serving Suggestions
Serve hot with coconut chutney and sambar.
Suitable for breakfast or light dinner.
